There might be a bit of an irony in naming this new cocktail bar in the city – Cavity. Contrary to being a void or an absence, there is a profound filling of the senses. It is a fluid, nine-course narrative helmed by co-founders Jeet Rana and Chirag Pal, held strong by the culinary vision of Chef Amninder Sandhu. The transition unfolds the descent into India’s rich geographical history, with the experience anchored in the country’s GI-tagged ingredients.
